A TOUCH OF HISTORY,

Pepper was originally an offering for the gods. It was then used as money (comparable to gold), ransom and even tax. It originates from the Ghats (mountain range) on the Malabar coast (West India). It was then used in other part of the world like Asia, Madagascar and Brazil. Called "piper", is it Pierre POIVRE, the governor of Mauritius island who gave it it French name "poivre". In the past, everyone's wealth was measured by their stock of pepper. Pepper is nowadays used as a last-minute condiment to invigorate the taste of food. LET’S DIG IN!

From the family of piperaceae (lianas, shrubs), its flowers are hermaphrodite and pollinated by rain. These fruits form a cluster that can reach 15 centimeters long and contain about forty berries. The pepper berries are like the Voatsiperifery but of a higher caliber. They're picked before maturity and then dried in the sun. For all its flavors to be released, the pepper must be in grain but it can be ground for other preparations. Cubeb pepper has a minimal spiciness. Its menthol-citrus (eucalyptus), floral (lavender, rosemary) aromas will add flavour and a tangy, camphoric note to all your preparations.

Its use is multiple and unavoidable to bring out food's flavours: will mix wonderfully with Indonesian and Moroccan dishes. It is used on fruit desserts (pineapple, melon).
