Sichuan pepper is native to northern China in altitude forests. It has other names like: Setchouan, fagara, pepper-flower, Chinese pepper ... Sichuan cuisine is one of the largest Chinese cuisines. Sichuan pepper has been a local anesthetic in Chinese medicine for centuries. Emperor Te Tsung put it in his tea in the seventh century. The Chinese used it in drinks as well as in the food offered to the gods. It was in the twelfth century that Marco Polo brought it back to Europe (to Venice) where it was then consumed by the nobility.

From the family Rutaceae (citrus shrubs), its red fruits come from the bunches of an Asian spiny ash tree: the Fagara. Each pepper berry contains a small black seed that must be removed with a goose feather according to tradition. The berry's enveloppe is the only thing that is consumed. For all its flavors to come out, Sichuan pepper must be in grain and ground at the last moment. Dry roast the berries for one minute in the pan, it will release even more flavors.
