A TOUCH OF HISTORY,

Jamaican pepper originates from the West Indies but is also grown in Central America. He arrived in Europe thanks to Christopher Columbus who calls it "Jamaica pepper" for economic reasons, in order to sell it at the same price as pepper, it is a very sought after commodity. It is known by other names: Wood of India in the Caribbean, "Allspice" by the English, Four-spice in France and Pimento for the Jamaicans. The allspice acclimates only in this tropical region. The berries are used as a last-minute condiment to invigorate the taste of food.

LET'S DIG IN

From the Myrtaceae family (shrubs such as clove), it is found in the wild. Its fruits are picked before the mature (reddish color) and are then dried in the sun, hence its brown hue. For all its flavors to emerge, Jamaican pepper must be in grain and ground at the last moment. But it can't be cooked for a long time. This pepper has notes of cinnamon, clove, nutmeg and pepper, then becomes aromatic and warm in the mouth. It challenges the palate with its palette of captivating scents.
