LATIN NAME: Thymus serpyllum

A TOUCH OF HISTORY,

Wild Thyme is native to southern Europe (especially the scrubland, a typical Mediterranean area, arid and mountainous). This spice was once a symbol of courage and energy (the Romans used to take baths filled with wild thyme before going to war). It was recognized as a pillar of Provencal condiments in the sixteenth century. This herb has several names: Wild thyme, serpoule, thyme and farigoule thyme ... It is nowadays used for its medicinal and especially aromatic virtues.

LET'S DIG IN!

We eat the leaves (fresh or dried) of this aromatic spice, that's very similar to thyme. Wild Thyme is very fragrant. Its taste wavers between bitterness and spicyness. This plant can remind our taste buds of Melissa. It can stand cooking and goes very well with garlic, olive oil and balsamic vinegar. Wild thyme is part of the Herbes de Provence mix as well as the Corse du maquis mix.

Using it will embellish your salty dishes such as fish, stews, grilled meats, poultry, southern vegetables, spring salads, wine based sauces ... and will also perfume your jams and jellies, fruit salads, compotes and ice cream ...

It is an essential spice in the Mediterranean gastronomy.

WHAT OUR GRANDMOTHERS TOLD US

Wild thyme is an excellent remedy for sore throats and coughs. When infused, this spice has sedative properties like thyme linalool. In addition, it's diuretic, vermifuge and has powerful antispasmodic (against muscle spasms) and antiseptic virtues. It also relieves pain related to rheumatism.

ANECDOTE ...
