A TOUCH OF HISTORY,

Vanilla is native to Central America. The Mayans used it with cocoa during rituals (as an offering to the gods). It's a famous spice thanks to its aphrodisiac properties. Originally, vanilla owed its fructification to bees. But a young slave from the Ile de Reunion developed a process that allowed the production of vanilla on a large scale. Today, this spice can rarely be found in the wild. The "vanilla pompona" is thicker and flatter than its cousin the planifolia.

LET'S DIG IN!

Vanilla comes from the same family as a tropical liana orchid called "vanillier". After pollination, the vanilla flower forms a green clove that darkens afterwards, thanks to a long and meticulous method. To use the vanilla clove, you need to follow certain steps: first you have to split the vanilla clove  lengthwise and gently extract the black seeds. These give off a gentle and sweet scent. You can then dry the previously opened clove and make a powder out of it, or vanilla sugar ...

Tahitian vanilla gives off aniseed and caramelized flavors when added to poultry, fish and shellfish dishes. It is ideal for cocktails and desserts. Tahitian Vanilla  is less sweet than Bourbon vanilla but is just as fragrant!
